10 Things I Learned From Chefs Anna & Michael Olson at Jasper CIN

Christmas in November (CIN) at the Fairmont Jasper Park Lodge (JPL) celebrated 31 years last month, and chefs Anna and Michael Olson have been there for 15 of them. As a contributor to Alberta Pork’s Passion for Pork initiative, I’ve had the privilege of attending Jasper CIN for the past seven years. Chef Corbin Tomaszeski on growing up on a farm, knowing where his food comes from, and inspiring people to cook and eat together

At this year’s Christmas in November at the Fairmont Jasper Park Lodge, celebrity chef Corbin Tomaszeski was all about teaching others to have fun in the kitchen. His culinary sessions included everything from sabering champagne bottles to having his kitchen helpers on stage (like my friend Abe) gobble like a turkey every time he said “turkey” while sharing his recipe for spiced turkey sliders. Beyond the giggles and entertainment in his Taste Alberta sponsored cooking demos and fireside chats, chef Corbin had a message to share about ingredients, cooking food, and eating a meal. It was a simple concept, and one that Corbin experienced throughout his childhood growing up on a farm in Alberta. Heading to the Fairmont Jasper Park Lodge (JPL) to experience Christmas in November (CIN) has become my favourite event of the year. Who wouldn’t love escaping to the mountains to spend your days in interactive culinary sessions with local and celebrity chefs, getting your Christmas decor and craft on, and indulging in decadent meals and a few adult beverages. The hardest part is deciding which session to go to and when to fit in a dip in the heated pool. The first Jasper CIN I attended was five years ago for their 25th anniversary, and I can tell you they like to celebrate anniversaries.
